Nicole’s Oatmeal Muffins

I hope you have all been enjoying the “Oatmeal Pattys” that I posted a recipe for a few months back. Since these easy and healthy meals are a part of daily eating, I wanted to try to find an even EASIER way to make them. Many batches ended up in the trash on the journey to the perfect oatmeal MUFFIN….. but I am so pleased with the final result. This recipe yields 4 servings and dirties up less dishes than the original patty; I don’t know if I will ever go back to the original way.

Preheat oven to 350

In a bowl combine the following:

12 Egg Whites
1 Cup Natural Unsweetened Applesauce
1 Tbs Vanilla Extract
More or less than 1/3 Cup Stevia Sugar Blend or other sweetener
Cinnamon to taste (I like to use A LOT… so that when I mix it all together I can lean over and smell the cinnamon in the mix)

After mixing thoroughly, add 1 Cup Oatmeal and 1/2 Cup Bob’s Red Mill 7, 9, or 10 Grain Hot Cereal. This can be found in the Dierberg’s Whole Food section and you can use ANY of these hot cereals. You should eat a variety of healthy foods, and these mixes are a great way to change it up from the normal oatmeal and get the benefits of the numerous other nutritious grains that exist. If you run out of your hot cereal, you can substitute with another cup of oatmeal.

Spray 12 muffin tins WELL. I prefer Pam Olive Oil spray.

Pour your mixture into the muffin tins and bake at 350 for 20 minutes. Let cool before removing. Pop them into the fridge until you are ready to enjoy them!  If you just eat ONE you will be getting 110 calories with 6g protein, 19g carbs, 1g fat, and 2g fiber. I consider three to be a serving for a morning meal. One serving (3) packs 330 calories with a whopping 17g protein, 57g of nutritious complex carbohydrates, a low 2g fat, and a hefty 6g fiber. It’s such a fast, easy, no-excuses way to start your day!

Modifications:

You can replace some or all of the applesauce with smashed up bananas for a different texture and taste. One banana will replace 1/2 cup applesauce. So try 1 banana and 1/2 cup applesauce or try 2 bananas. If you want a different flavor, cut out some of the applesauce and add blueberries, cranberries, or dates. You can even add some healthy fats with a bit of slivered almonds or crushed walnuts. The cinnamon…take it or leave it! Need a sweet treat? Make your muffins like normal and once they are in the pan, count out some chocolate chips and add a few to each muffin. Yum!
